Au Bon Pain to expand Portions line

BOSTON Au Bon Pain, encouraged by brisk sales of its new Portions small-plates line, said it would roll out breakfast and dessert items this fall as the second phase of the program.

Thomas John, Au Bon Pain’s executive chef, said the new phase could include such dessert items as small pastries; banana, chocolate and almonds; and brown rice pudding. The breakfast line could include quinoa, muesli and other natural, whole grain cereals, he said.

The initial phase of the small-plates line debuted earlier this month with 14 different items that each contain 200 calories or less and are priced between $2.99 and $3.49. The lineup includes such items as brie, fruit and crackers; Mediterranean tuna salad; and Thai peanut chicken and snow peas. Each selection measures between 4 and 5 ounces per serving.
