Bertineau named head chef at Balthazar

Philippe Bertineau is the new head chef of Balthazar, the flagship of New York City restaurateur Keith McNally, the restaurant confirmed Wednesday. Bertineau previously was executive chef of Payard, a New York City French restaurant and patisserie that closed last year. He held that position for 12 years, and before that was a sous chef at Daniel. Riad Nasr and Lee Hanson remain the corporate chefs for McNally’s restaurants, and their names are still on the menus at Balthazar as well ...
