Economy, sustainability key issues for upcoming NACUFS conference

OKEMOS Mich —Members of the college and university segment of the foodservice industry will converge on Milwaukee next month for the 51st annual National Association of College & University Food Services, or NACUFS, conference.

This year’s event will be held at the Midwest Airlines Center July 8-11, and is titled “Celebrate the Future.” Sessions are expected to focus on a number of topics geared toward helping foodservice administrators better understand the challenges associated with the economic slowdown as well as issues concerning the trend of becoming more sustainable and eco-friendly at their respective facilities. —Members of the college and university segment of the foodservice industry will converge on Milwaukee next month for the 51st annual National Association of College & University Food Services, or NACUFS, conference.

“Most of the panel sessions will cut across all sectors of the college foodservice business,” said Joseph Spina, executive director of NACUFS. “There’s really a nice sampling of topics, and several will deal with cost issues and how to be sustainable in a tough economy. “We’re expecting about 500 representatives from nearly 200 universities,” he said. “The economy is having an impact on all associations and meetings, and we’re no different from any other group combating the recession. Attendance will be down, but we still expect it to be a healthy turnout for us. “As states start to reduce their financial support of college foodservice programs, members are asking us to step up our educational programs,” he said. “They’re not getting as much money from their endowments or taxpayer support, so they need to look at other ways to make up the difference, such as auxiliary foodservice programs.
