Fine-dining restaurant aboard new Disney ship

CELEBRATION Fla. Disney's latest cruise ship will feature a fine-dining French restaurant called Remy when it sets sail next year.

Steering the French cuisine at Remy on the Disney Dream is Michelin two-star chef Arnaud Lallement from L’Assiette Champenoise just outside Reims, France. He will consult along with Scott Hunnel of Victoria & Albert’s, a fine-dining restaurant at Walt Disney World Resort.

Pastry chefs Erich Herbitschek of Victoria & Albert’s and Mattieu Gerard Siegrist from L’Assiette Champenoise will direct Remy’s bread and dessert offerings. Chef Patrick Albert will be at the helm of the 80-seat restaurant as the executive chef.

“This is a different direction with Remy,” said Karl Holz, president of Disney Cruise Line and New Vacation Operations. “It is contemporary French. Well take advantage of where we are” using local ingredients in port.

Remy, whose name is inspired by Disney/Pixar's hit movie "Ratatouille," will be on the top deck and offer ocean views, private dining and adults-only dining.
