Kent Rathbun on how chefs can go retail

Kent Rathbun, a Dallas-based restaurateur with a retail line of rubs, marinades, sauces and salts, offers advice on how independent chefs can get their recipe inventions on grocery shelves.

Rathbun recently landed a spot in the upcoming Neiman Marcus Christmas Book for a Lobster Shooter Kit based on the popular appetizer at Abacus, his fine-dining restaurant in Dallas. The kit, which is designed for consumers to make the dish at home, will include a sake serving set and Rathbun's bottled Elements red curry-coconut sauce. Neiman Marcus' annual holiday catalog debuts in October.

Rathbun also sells his Elements products online at http://www.kentrathbunstore.com. In addition to Abacus, Rathbun owns the casual-dining Jasper's concept in Texas.
