The past year saw a spate of experimentation with different kinds of bread, but perhaps no type of baked, yeasty dough got more play than the pretzel.
The origins of this chewy, twisted bread can be traced to the ancient Romans, but in 2013 it was a sandwich carrier, sauce conveyor, dessert ingredient and, quite possibly, an object of affection.
Pretzels are selling well, according to point-of-sale data analyzed by research firm GuestMetrics, which said sales of items with pretzels in them rose about 21 percent in the third quarter of 2013 compared with a year earlier. Burgers and other sandwiches made with pretzel buns accounted for the majority of growth.
