Philippe Bertineau is the new head chef of Balthazar, the flagship of New York City restaurateur Keith McNally, the restaurant confirmed Wednesday. Bertineau previously was executive chef of Payard, a New York City French restaurant and patisserie that closed last year. He held that position for 12 years, and before that was a sous chef at Daniel.
