Diesel prices drive foodservice costs more than any other factor. Fuel and freight increase costs at every link in the supply chain. The national average of on-highway diesel prices hit $3.98 per gallon for the week ending April 1, and diesel was $4.32 in California. Those prices are $0.96 and $1.17 higher, respectively, than a year ago. Diesel prices averaged $2.99 for the year in 2010, and the Energy Information Administration is projecting a jump to an average of $3.81 in 2011. ...
