MADISON Ga. Don Pablo's Mexican Kitchen, the 95-unit casual-dining chain, has named Modesto Alcala to the new position of president. Alcala was also named a senior vice president of the parent company, Avado Brands. Alcala is the former chief operating officer of Buca di Beppo. Alcala also has worked with Copeland's Famous New Orleans Restaurant and Bar, the café operations of Barnes & Noble Inc. and Carlson Restaurants Worldwide Inc.
