Reader: Food’s future requires moderation, not regulation

Editor, NRN: Right on, man, right on! I understand the sarcasm, however, if we as a nation, keep going down the path you outline [in “Death of an industry: A look at what’s in store if food regulations continue,” Nov. 27, 2006], your words may prove to be more fact than fiction.

As a corporate research chef and founding member of the Research Chefs Association—www.culinology.org—I understand the importance of moderation. It is not necessarily what we eat, rather how much we eat.

Keep up the great work.
