Zaxby’s specializes in batter-fried chicken tenders and wings and operates throughout the Southeast, as well as in Texas and Indiana. In 2011 it was the fastest growing chicken chain in terms of units, adding 26 locations, all franchised — a growth rate of 5 percent. It was the second fastest growing chain in terms of systemwide sales, after Chick-fil-A, with revenue up by 8 percent.
