I recently tried to get a spokesman from Applebee’s to tell me how well his chain’s low-calorie Weight Watchers and Under 550 Calorie items were selling. He declined to give me figures for competitive reasons, but he did indicate that the 2,000-unit casual-
dining chain, which recently added new items in those categories, wouldn’t be doing that if they weren’t selling well.

Some pundits say the economy is showing hints of improvement and consumers are spending a bit more. While foodservice operators may find that encouraging, most would say this is no time to let up. It is wiser to upgrade the menu with items of continuing consumer appeal. Take sandwiches, particularly ones made with chicken, a protein of growing importance today.

Burger King became the latest quick-service player to edge into casual-dining pricing territory when it began rolling out its Fire-Grilled Ribs eight-piece combo meal for $8.99 in major markets earlier this month.


But while other QSR operators have offered items that are near or exceed $9 — Subway sells its Big Philly Cheese Steak sub for $9.28 in some markets — observers say Burger King’s attempts to establish a broader range of menu prices could result in customer pushback.
