But if we’ve learned one thing from the red-hot “better burger” trend, it’s that customers also love designing their own burgers with new flavor and ingredient combinations, including spins on the traditional beef patty and condiments.

I recently tried to get a spokesman from Applebee’s to tell me how well his chain’s low-calorie Weight Watchers and Under 550 Calorie items were selling. He declined to give me figures for competitive reasons, but he did indicate that the 2,000-unit casual-
dining chain, which recently added new items in those categories, wouldn’t be doing that if they weren’t selling well.
