There's a desire among diners to improve their diets and learn more about the foods they are eating; but their behavior doesn't always match their intentions. Several recent studies from the International Food Information Council Foundation, Nutrition Journal, National Restaurant Association and NPD Group looked at consumer attitudes toward nutrition, energy intakes, and customer behaviors and drivers.
