The dish: Scottish salmon with hay-roasted carrots, sea buckthorn, porcini and spruce, $38

The wine: 2011 rosé of Spätburgunder, Riedlingen Kuntz, Spatlese, Laufen, Germany, $43 per bottle

Grape varietal: Pinot Noir
 
The pairing: The grape in this particular wine has a little bit of ripeness, and it’s aged, which is unusual for a rosé. So while there’s still life to the fruit and acid, there are tertiary flavors of black tea and mushroom. The combination of fruit, earth, freshness and acid make it a great pairing with the salmon, hay and carrots in the dish.

More about the wine: Winemaker Sybille Kuntz is famous in Germany for her Mosel Rieslings, but she convinced her husband, Markus Kuntz, to make this rosé. The 2011 vintage is just the second time he made this particular wine.
