WICHITA Kan. Bud Boswell has been named corporate executive chef and director of product development for the Texas Land & Cattle Steak House and Lone Star Steakhouse & Saloon chains, he told Nation’s Restaurant News Monday.
Boswell replaces Mike McKinnon.
Formerly the executive chef and director of research and development for the 320-unit Pizza Inn, Boswell is introducing new menus at both steakhouse chains later this month, with 20 new items set for the 28-unit Texas Land & Cattle brand and 13 new items expected for the 140-unit Lone Star brand.
Boswell said new menu items that will be introduced at both concepts include au gratin potatoes, creamed spinach, a peppercorn-crusted rib eye with brandy cream sauce and shaved sirloin sandwiches. A stuffed jalapeno pepper appetizer, fish tacos, a seafood entree and a margarita chicken entree will be rolled out first at Texas Land & Cattle and then later at Lone Star, he said.
Both steakhouse chains are owned by Dallas-based Lone Star Funds, a private-equity firm.
