Shoestring fries are appearing on more menus because they’re adaptable and provide nostalgia for consumers, who either remember grabbing some thin and crispy fries with a burger as they rose in popularity in the 1950s and ’60s, or more likely pine for bygone days that they never actually knew.
They’re also faster to cook than thicker fries, making for quicker orders, and they’re usually crispier, too — a quality generally enjoyed by consumers.

Shoestring fries are growing on menus for their adaptability, providing nostalgia for consumers who remember grabbing some super-thin and crispy fries with a burger as they rose in popularity in the 1950s and 1960s, and for their rightful place in a classic dish of sophisticated Steak Frites. However consumers remember first having them, shoestring fries have returned to an increasing number of menus as a crispier cousin of the traditional fry. They’re equally loved across demographic groups, with 63% of all consumers saying they like or love them. Recipe: Cut rustic potatoes into juliennes. Soak them in water with salt for 20 minutes. Drain and then rinse. Make sure to pat them dry completely before deep frying. Add neutral oil to a deep pan and deep fry your fries carefully making sure not to overcrowd the pan. Once deep fried, sprinkle in salt. Add a tablespoon of butter to a pan and then add in your diced white onions with salt and pepper. It will take about 10-15 minutes for the onions to caramelize. Add fries to a pan with American sliced cheese on top. Melt the cheese in the oven at 350 degrees Fahrenheit for about 5 minutes or until cheese is melted to your liking. Add in the sauce and then onions on top.
