Luke’s Lobster, a fast-casual chain with 20 units in the United States and five in Japan, was founded by Maine native Luke Holden.
“I was sitting at my desk on a hot summer Sunday and looking for a lobster roll, and I couldn’t find any high quality, authentic Maine lobster rolls,” said CEO and founder Holden, who was living in New York City.
“So I put together a business plan to answer the question of why all these great chefs were screwing [it] up.”
Holden and business partner Ben Conniff opened the first Luke’s Lobster in the fall of 2009.
