Be on the lookout for more goat, pork, and chicken barbacoa, and to see the term used beyond the tacos and burritos where beef barbacoa is most frequently seen. 

Barbacoa is in the Adoption stage. It’s gaining traction on menus but is still considered unique. It can be found at independent casual-dining and progressive fast-casual restaurants.
