Coconut curry comes in a wide variety of flavors and colors. It can be many shades of red, green, yellow and brown. It can include both fresh and dry herbs and spices.

Coconut curry is in the Adoption stage. It’s gaining traction on menus but still considered unusual.

Fresh City in Boston has a sweet coconut curry called the Montego Bay Bowl. It contains mangoes, onions, bell peppers and toasted coconut as well as coconut curry.
