Matcha is a Japanese powdered green tea used as both a beverage and a flavoring for numerous dishes and desserts. The process of turning green tea into a powder amplifies its chlorophyll content, producing a full-bodied, vegetal flavor.
Matcha is in the Adoption Stage. It’s gaining traction on menus, but is still considered unique. It can be found at independent casual-dining and progressive fast-casual restaurants.
