The Sausalito, Calif., restaurant will introduce a new cocktail on July 24: The Fire & Ice — crafted with arbol chile-infused tequila, watermelon juice, Aperol, lime, agave syrup and mint for $13. Copita will also offer a special flight featuring three different kinds of tequila for $35.

El Torito, a Real Mex Restaurants brand with over 30 units, will reveal its latest Margarita, the Mariposa, on National Tequila Day. The 24-oz. sip is made with organic tequila, ancho chile liqueur, pineapple juice, mango juice, butterfly tea and a float of Cointreau. Because of the butterfly tea, which is made from the butterfly pea flour, the drink has a blue hue that changes to purple when the final ingredients are added. A version of this drink also will become available on July 24 at 8-unit Acapulco, another Real Mex Restaurants brand, as the Mariposa Azul. Real Mex Restaurants is based in Cypress, Calif., and has 78 restaurants and seven brands.

In celebration of National Tequila Day, the Cambridge, Mass., spot is serving a new cocktail available throughout this week only: The Hibiscus Tequila Shot — a concoction of tequila, hibiscus liqueur and lime juice garnished with a lime wedge and an umbrella. The drink is priced at $5.
