The French technique transforms eggs into a premium dish
Shirred eggs refer to a French technique in which eggs are baked with cream, cheese and herbs. The eggs are cooked until the whites are firm but the yolk is still runny. The word “shirred” comes from the shirrer, a flat-bottomed dish that is traditionally used for this preparation. Shirred eggs have grown on United States menus by 67 percent over the past four years.
