Bartenders are using the sugar more frequently
Demerara is a raw, light brown and large-grain sugar made from sugarcane. It is generally less refined than more mainstream brown sugars — giving it added appeal to some consumers — and has a natural toffee-like flavor. The use of the ingredient in cocktails is becoming more common, with 200 percent growth on menus in the United States over the past four years.
