Breakfast-on-the-run is a must for customers in a hurry. Restaurant and noncommercial operators can speed them on their way while driving breakfast sales with quick, tasty, portable breakfast biscuits and sandwiches.
This is a vibrant business opportunity that spans industry segments. Indeed, 52% of consumers—including 67% of millennials and 63% of Gen Z adults—say ordering takeout from a restaurant is an essential part of their lifestyle, according to the 2024 State of the Restaurant Industry Report by the National Restaurant Association.
The report also notes that although 88% of consumers are satisfied with the variety of local food options for takeout and delivery, they are open to experiencing takeout and delivery in new ways. For instance, 67% of adults say they would be interested in subscriptions that offer a specified number of meals each month. And 53% say they are open to supplementing home-cooked meals with restaurant prepared items.
Although the demand for convenient breakfast options exists year-round, it increases in spring and summer, when school vacations, leisure travel, and outdoor recreation activities heighten the need for food-away-from-home. Events such as summer picnics, graduations, and family reunions also make customers inclined to seek takeout.
“Convenience-style foods are more popular now than ever, due to the busy and demanding lifestyles so many people have,” says Chef Steven Bell of Tyson Foodservice. “Sausage sandwiches and sausage biscuits are items consumers can enjoy while on vacations and road trips.”
Choosing sandwich approaches
Gearing up for a takeout program begins by optimizing the menu. It should be composed of items that are on-trend and appealing to customers, retain proper temperature and quality in transit, and fit the labor and skill parameters of the operation.
A key decision is choosing whether to use individually wrapped, prepared breakfast biscuits and sandwiches, or to assemble such items in the kitchen with ingredients of one’s choosing.

The other approach—making portable breakfast sandwiches in the kitchen with a variety of ingredients—allows operators to customize breakfast sandwiches according to customer wishes. “Many customers want the option to choose their own base carrier, a protein such as breakfast sausage or bacon, and toppings such as cheese and sauce,” says Bell. “This flexibility also allows them to be mindful of factors such as personal dietary goals and allergens.”
