Tired of chickpeas? Try macadamia hummus. Your customers want something besides ranch dressing for their kids? Try the new cheese pizza and PB&J dips. Bagels made from ancient grains; frozen, ready-to-heat pretzels from Germany; ciabatta bites; ready-to-bake frozen croissants and more breads, mostly free of everything people are avoiding except for gluten — preservatives, GMOs, high fructose corn syrup — will all be on display.

Expect to see plenty of cold-brew coffee at the show, including some ready-to-drink varieties, as well as at least one brew made to taste like the java of our soon-to-be trading partner, Cuba.

Given the high prices of beef and fluctuating prices of chicken lately, there is opportunity for other proteins to gain footholds in the foodservice scene. Seafood manufacturers are giving it a try with items such as trout jerky, cod nuggets (including a variety with Sriracha flavor) and whitefish burgers.
