Ingredients:
4 oz macaroni
½ cup waffle mix
¼ cup whole milk
1 whole egg
½ tsp fajita seasoning
Oil for waffle iron
3 oz RITZ Crushed Crackers
2 cups nacho cheese sauce
1 each avocado
2 oz cherry tomatoes
Fresh basil leaves
Directions:
1. Cook macaroni in 1 ½ quarts boiling, salted water. Spread on tray to cool.
2. In mixing bowl, whisk waffle mix, milk and egg together. Add fajita seasoning. Stir.
3. Add cooked macaroni to waffle batter and combine.
4. Preheat waffle iron, and spray or brush with oil. Spread RITZ Crushed Crackers on heated iron. Spread waffle batter on crushed crackers. Close iron and cook until waffle batter turns golden brown.
5. Warm nacho cheese sauce in small saucepan. Cut avocado into small dice and slice cherry tomatoes into rounds.
6. Place waffle on plate. Top waffle with nacho cheese sauce, avocado and tomato pieces. Garnish with basil leaves. Serve.
