Umami Restaurant Group LLC, parent to the Umami Burger chain, has named Trevor Sacco to the newly created role of vice president of restaurant operations.
Sacco, who previously headed The Sacco Restaurant Group consulting firm, has 25 years of experience in the industry. Prior roles included serving as chief operating officer for Bice Restaurant Group, vice president of operations for Daphne’s Greek Café, and 13 years in operations at Sbarro, the company said.
At Los Angeles-based Umami Restaurant Group, Sacco will oversee the expansion of Umami Burger, which has 14 locations in California and another 13 scheduled to open in 2013, including the chain’s first units in New York and Miami.

“Trevor understands our brand and how to expand restaurant operations on the scale necessary to support our impending growth,” said Adam Fleischman, Umami Restaurant Group founder and chief executive. “In the next year, Trevor will oversee the doubling of our number of restaurants and help us open our first stores outside California.”
Umami Restaurant Group also includes the Los Angeles-area restaurants Umamicatessen, a collection of eateries; U Mini, a quick-service variation on Umami Burger; and 800 Degrees, a fast-casual pizza concept. The group also includes the one-off upscale restaurant Red Medicine.
