ROSEVILLE Calif. Paul Martin’s American Bistro, the newest concept by industry pioneer Paul Fleming, has opened in Roseville, Calif.
The 250-seat, casual-dining concept, which was created by Paul Fleming Restaurants LLC, focuses on food made from local and sustainable ingredients, with most dishes priced between $10 and $22. According to the restaurant's website, more than 80 percent of the eatery's 40-plus purveyors are based in Northern California. Roseville is about 20 miles northeast of Sacramento.
Fleming -- whose middle name is Martin -- has partnered with Brian Bennett and Peter Serantoni in the venture, with chef Scott Rose heading up the kitchen, according to a statement from the restaurant.
Fleming was the creator of the 157-unit P.F. Chang's China Bistro chain and the 126-unit sister brand Pei Wei Asian Diner, both of which he later sold. The two brands are now operated by Scottsdale, Ariz.-based P.F. Chang's China Bistro Inc.
Fleming also is the inspiration for the 51-unit Fleming's Prime Steakhouse & Wine Bar, as well as Blue Coral Seafood & Spirits, both of which are owned by Tampa, Fla.-based OSI Restaurant Partners. Last year, OSI sold its stake in the four-unit Paul Lee's Chinese Kitchen chain to Fleming, who had co-developed the concept. He has since closed the units.
While Fleming said in a report in The Sacramento Bee that he doesn't plan to take Paul Martin's national, he and his partners in the restaurant have significant experience in chain operations, including Chevys Fresh Mex and Bakers Square.
Earlier this year, Paul Fleming Restaurants LLC, which is based in Phoenix, acquired the 10-unit Z'Tejas Southwestern Grill chain with plans for expansion. Paul Fleming Restaurants' website notes that the company "is also actively pursuing investments in great small-growth restaurant companies."
