Non-traditional pizza toppings are all the rage these days. Even mainstream chains like Domino’s are offering such non-traditional toppings as feta cheese, Tuscan salami and roasted vegetables.
Smaller chains have gotten in on the action, too, such as 160-unit Papa Gino’s, which last month introduced limited-time specialty pizzas with toppings like ricotta, Asiago cheese, Panama peppers and Alfredo sauce.
And Uno’s, a 150-unit pizza chain, introduced pizza topped with feta and goat cheeses and caramelized onions in October.
But most diners stick to the tried and true ingredients, according to Technomic’s MenuMonitor, which surveyed 235 restaurants that serve pizza.
