Osteen set to bring his lowcountry cuisine to high rollers in Vegas

PAWLEYS ISLAND S.C. Louis Osteen, chef/owner of Louis’s at Pawleys and The Fish Camp Bar here, is reportedly scheduled to open versions of his concepts in Las Vegas later this year.

To be dubbed Louis’s Las Vegas and Louis’s Fish Camp, the dual venue is expected to be housed in Town Square, a $600 million development at the south end of the Strip. The more-upscale restaurant will have about 350 seats and the bar and casual-dining outlet is expected to seat another 80. Osteen put start-up costs at more than $5 million. The opening date is targeted for Nov. 14.

Known for his high-end take on the traditional “lowcountry” cuisine of South Carolina, Osteen has hired Carlos Guia, the former chef at Commander’s Palace Las Vegas, to helm the kitchen.
