Rathbun to debut casual concept in Dallas

DALLAS Kent Rathbun, chef-owner of the fine-dining Abacus and the more casual three-unit Jasper’s, plans to open the “casual, affordable” Rathbun’s Blue Plate Kitchen here Feb. 23.

Rathbun’s Blue Plate Kitchen will offer regionally grown wine and source produce from local purveyors. The menu will include such dishes as a whole-wheat Texas pecan waffle with Latte Da Goat Cheese and Round Rock Honey as well as Rathbun’s version of Southern pan-fried pork chop with Sawmill Mustard gravy and “MawMaw’s Buttermilk Pie” with raspberry jam.

“Rathbun’s Blue Plate Kitchen is a reflection of the kinds of dishes I enjoy cooking for my family at home as well as dishes I remember eating growing up,” Rathbun said, “so it is very exciting for me to finally have a new conduit in food preparation and service.”

Rathbun’s Abacus is a Nation’s Restaurant News Fine Dining Hall of Fame winner, and his Jasper’s was one of NRN's Hot Concepts! honorees in 2008.
