Former Luby’s exec Scott Gray named CFO of Twin Peaks

Gray left the Fuddruckers and Luby’s Cafeteria parent in April and moves to the Dallas-based sports lodge-themed ‘breastaurant’ chain

Twin Peaks on Thursday named former Luby’s Inc. executive Scott Gray to the role of chief financial officer.

In addition, Mike Prentiss has been named controller for the Dallas-based casual-dining chain.

“We are very excited to have Scott and Mike join the Twin Peaks team,” said Joe Hummel, Twin Peaks’ CEO, in a statement. “Both team members bring extensive, impressive backgrounds with proven track records of success in finance and in the restaurant industry to our brand.”

Gray, who replaces Dan Lawler as Twin Peaks' CFO, has worked with both private and public multiconcept restaurant groups, including Pappas Restaurants and most recently as CFO of Luby’s, which is moving toward liquidation after unsuccessfully seeking a buyer. Gray, below, resigned from Luby’s in April, according to filings with the Securities and Exchange Commission.

Twin_Peaks_Scott_Gray.pngPrentiss is also a restaurant veteran whose past experience includes stints at Landry’s Restaurants Inc. and Fogo de Chao, where he worked his way up to the CFO position. At Twin Peaks, Prentiss will be responsible for directing all accounting operational functions, the company said.

Founded in 2005, Twin Peaks has 78 locations in 24 states and is known as a sports lodge-themed concept with cold beer served by “attractive Twin Peaks Girls.”
