DALLAS Management turnover for high-volume, high-end independent restaurants in New York City rose during the quarter ended September 2007, bucking the trend for chain fine-dining places nationwide and the overall industry, according to People Report.
But the turnover of hourly workers employed at New York independents fell by 1 percent, compared with an increase for chain fine-dining operations, the research company found.
Fifty-three percent of the companies who contribute to People Report's Independent Operator Report said their turnover of management personnel had increased. Those operations, all in New York, generate more than $6 million in annual sales and have a per-guest average tab of at least $55.
Fifty-three of the New York independents also said the turnover of hourly employees had decreased, People Report said.
Overall employment within the independent restaurants rose by 1 percent, fueled by a "significant" 2-percent rise in their hourly workforce, according to the company.
