Alfajores are popular cookies in South America, and are gaining more fans in the U.S., with 60-percent menu growth stateside over the past four years. Alfajores consist of shortbread sandwiched with dulce de leche, a type of caramel, and dusted with powdered sugar. The confection can currently be found mostly at independent restaurants.
