This week on Nation's Restaurant News, Chris Simms, CEO and founder of Lazy Dog, sat down with Nancy Luna in this week's episode of Extra Serving to talk about California's rollback of dine-in. In our podcast, Simms talks about the challenges of launching a new location during a pandemic, the controversy over mask wearing in restaurants, how the company deals with different reopening rules in each state, and how he manages to sustain the business with occupancy caps.

We also talked with Patrick Hardy, a certified emergency manager, certified risk manager, and FEMA master of exercise practitioner where he discusses how and why restaurants should have an emergency plan in place for the next round of coronavirus or another pandemic. When asked 'How likely are we to experience a second wave in the fall?' He said, "We should assume it’s going to happen, and in fact, it’s already happening. There are spikes in certain areas of the country because people are starting to have parties and are not following social distancing orders."
