Bernard named executive chef of Big Bowl

Lettuce Entertain You Enterprises has named company veteran Marc Bernard executive chef of its Big Bowl casual Asian chain.

Bernard, who has worked with LEYE for 12 years, previously was executive chef of that company’s Wow Bao steamed bun concept. He also created Big Bowl Express, which operates in upscale grocery stores in the Minneapolis area.

LEYE said Bernard will extend Big Bowl’s sustainability initiatives, working with local farmers to feature more sustainable and organic products.

Bernard has already added two desserts at the eight-unit Big Bowl, including ginger cake with pomegranate ginger glaze, orange slices and whipped cream; and lemon ginger crème brûlée. Both are priced at $3.95.
