Chemex
The Chemex has been around since 1941 and has remained unchanged to this day. The iconic hourglass shape is made of heat-resistant glass. This infusion style brewing method yields a coffee that has sharper high notes, enhanced acidity, and lower bitterness. The traditional model has a wooden collar along with a leather tie serves as an insulated handle around the vessel.
How to use a Chemex to prepare Hot Coffee:
- Grinding the Coffee: Grind coffee to a medium grind. Grind approximately 1 tablespoon for every 5 ounces of water.
- Filter: Place a Chemex-Bonded® Coffee Filter inside the top of the Chemex vessel. Make sure to place the filter with the 3-layered side covering the spout.
- Pre-moisten filter and pre-heat the brewer: Dampen the filter with warm water. Once the water has dripped through to the vessel and discard the water through the spout.
- Fill the Filter with Ground Coffee: Place 1 rounded tablespoon of coffee for every 5 ounce cup you wish to brew. Gently shake to even out the coffee bed.
- Water: Just before the water boils, remove from heat and let it sit for approximately 30 seconds.
- Bloom: Slowly pour a small amount over the grounds in a circular fashion to evenly wet. Wait 30-45 seconds. This step releases the gases from the coffee allowing it to expand.
- Pour: Pour small amounts of water, evenly saturating the grounds, in a spiral, being careful not to pour directly in the middle or on the sides of the filter. If the water gets close to the edge of the filter, pause while the coffee drains and continue pouring. Total time from Bloom to final drip out should be around 3 minutes and 30 seconds. If it is longer than 4 minutes, the coffee was ground too fine.
- Remove filter: Discard the filter and grounds, swirl the coffee in the Chemex, and serve.
Please note: The “button” on the side of the Chemex indicates the half way point and the bottom of the wooden “collar” indicates when it is full.
How to use a Chemex to prepare Iced Coffee
To make 5-5oz cups of iced coffee, do the following:
- Grinding the Coffee: Course grind 12 tablespoons of coffee (approximately 6 ounces).
- Ice: Fill Chemex with 2 cups of ice.
- Filter: Place a Chemex-Bonded® Coffee Filter inside the top of the Chemex vessel. Make sure to place the filter with the 3-layered side covering the spout.
- Coffee: Place 12 tablespoons of coffee in the filter.
- Water: Just before the water boils, remove from heat and let it sit for approximately 30 seconds.
- Bloom: Slowly pour a small amount over the grounds in a circular fashion to evenly wet. Wait 30-45 seconds. This step releases the gases from the coffee allowing it to expand.
- Pour: Continue pouring small amounts of coffee over the grounds in a circular pattern. Wait approximately 4 minutes for the brew to finish.
- Remove filter: Discard the filter and grounds, swirl the coffee in the Chemex, and over serve over ice

French Press
The French Press was developed in 1929 in Italian and is still popular today. There are a lot of reasons why many people enjoy using a French Press to prepare coffee. Because this method does not use a paper filter, some of the flavorful and aromatic coffee oils and some of the coffee particles are not removed. This results in a more favorable cup with pronounced bitter notes that people tend to enjoy.
How to Use a 4 Cup French Press for Hot Coffee
- Grinding the Coffee: Course grind approximately ½ cup of coffee beans.
- Pre-heat: Pre-heat the French press by adding boiling water to warm. Discard the water
- Coffee: Remove the plunger from the French Press and pour the coffee in.
- Water: Heat 4 cups (32 ounces) of water until just boiling. Remove from heat approximately 1 minute. Pour over the coffee grounds and stir
- Cover with Plunger: Place the plunger over the coffee and water, but do not press down.
- Time: Steep for 4 minutes using a timer
- Plunge: Press the plunger all the way to the bottom. Serve immediately.
Use a French Press to make Cold Brew Coffee
To Make Four Cups Of Cold Brew Concentrate:
- Coarsely grind 6 ounces of coffee beans. This should yield around 12 tablespoons, or 3/4 cup
- Place the grounds in the base of the French Press
- Pour 28 ounces of cold water over the grounds making sure to evenly soak all the coffee
- Stir once with a wooden spoon and cover with the plunger cap, but don't press down
- Place in a cool, dark location for 15 hours
- After 15 hours, plunge and pour the cold brew concentrate into a container
- Serve over ice or milk and enjoy
