Top 100 independent restaurants, overtime rule, Salad and Go

Who are the highest grossing independent restaurants this year? The annual list by Restaurant Business is out, and the Top 100 collectively generated nearly $2 billion in sales in 2023.

Among the Top 100 players is one family in Chicago, which represented seven of the top-grossing restaurants on the list. The Lombardo family is behind Gibsons Steakhouse, which had multiple locations on the Top 100, as well as sister brands The Boathouse (in partnership with famed restaurateur Steve Schussler), Gibsons Italia, Quartino, and Hugo’s Frog Bar & Fish House.

A Trump-appointed district judge in Texas has struck down the Biden-era overtime rule, which was set to go into effect fully in 2025. Under the now-overturned rule, the overtime threshold would have eventually increased to nearly $60,000.

Charlie Morrison is leaving Salad and Go. The CEO of the drive-thru salad concept told employees in September that he would leave by the end of the year.
