Togo’s Eateries Inc. has named former IHOP executive Jim Peros to the newly created position of chief operating officer, the company said Thursday.
Peros will oversee all operations and the expansion of the sandwich brand throughout the West. The company said his role includes leading the franchise operations team, training department and operations services group.
“Jim is a seasoned and trusted leader who brings a strong operational background to the Togo’s system,” said Tony Gioia, Togo’s chairman and chief executive. “His expertise and proven track record of success with renowned foodservice companies will help us further raise our standards of operational excellence as we continue to expand the brand’s presence in new and existing markets throughout the western United States.”
Previously, Peros operated his own restaurant consulting firm. He also spent nearly seven years at IHOP Corp., where he was interim president and senior vice president of operational services, among other positions.
Before that, he spent 15 years with Taco Bell, the Irvine, Calif.-based division of Yum! Brands Inc., in various leadership roles in marketing, systems, menu development and operations.
Based in San Jose, Calif., the Togo’s chain includes 252 locations throughout western states.
