In between the higher-end steaks of Del Frisco’s Double Eagle Steak House and the more accessible Outback Steakhouse lies a dining opportunity that Firebirds Wood Fired Grill is aiming to tap.

A polished-casual concept inspired by the lodges of Colorado, Firebirds was founded in 2000 by Dennis Thompson, co-founder of the Lone Star Steakhouse and Saloon chain and an original owner of Fox and Hound Bar & Grill. Charlotte, N.C.-based Firebirds has 30 units in 12 states and is scheduled to open seven this year.
