Every dish has a story behind it, and it often reflects its creators’ experience, heritage, and sources of inspiration. Those stories will be highlighted in MenuMasters Spotlight, a new video series sponsored by Ventura Foods that can be viewed on the MenuMasters YouTube channel.
The series will feature a new chef each month, sharing the history, perspective, and cuisine of that chef. It starts with Preston Clark, chef of Lure Fishbar in New York, where he offers up dishes such as sea urchin bucatini, salmon tiradito, and steamed red snapper with red curry. Clark is also the son of the legendary Patrick Clark, who was regarded as one of the best chefs of his time. In this series he shares how that upbringing has influenced his own career path.
Clark will be followed by Alex Seidel, the Denver-based chef behind fine-dining Fruition as well as Mercantile Provisions at the Union Station food hall. His newest venture is fast-casual Chook Charcoal Chicken, for which Seidel uses his culinary skills and top-notch sourcing to create an elevated yet affordable experience.
Next the spotlight will be turned on Beverly Kim, the former Top Chef contestant and co-owner of Michelin starred Parachute in Chicago, as well as neighboring Wherewithall, which serves a daily-changing four-course tasting menu.
Each of those chefs, and the ones who follow, speak candidly about their own experiences, share behind-the-scenes looks at their restaurants, and show how to cook a signature dish.
