Editor, NRN: I just had a week in a local hospital, where the food wasn’t half bad and was certainly healthy [see “Good medicine: Healthful fare the Rx for today’s hospital food,”]. But my greatest surprise was to find that the hospital provided an excellent gluten-free menu. Believe me, if you have celiac disease, having to fight with the hospital dietitian or kitchen to get gluten-free meals is the last thing someone wants on a hospital stay. I was so very impressed—and do hope it is a trend to grow.
