Flavor of the Week: Trumpet mushrooms pack a punch

Trumpet mushrooms are in the same family as oyster mushrooms, but have a look that is all their own, with a thick stem and smaller, flat brown cap.

These mushrooms have a smaller cap than a portobello, but they pack a punch with a distinctly meaty texture and high umami level that make it a darling of plant-forward and traditional menus alike.

You can spot trumpet mushrooms — also known as king oyster mushrooms — raw, seared, grilled and sautéed, both in side dishes and at the center of the plate.
