This summer, there was a surge of up-and-coming restaurant concepts that announced franchising, with the trendiest concepts being taco/Mexican spots and concepts in the coffee/dessert/snack category. Usually with smaller square footages, these types of foodservice operators are cheaper to build and easier to find eligible franchisees for.
