Rumbi Island Grill to expand into Calif.

SANDY Utah Rumbi Island Grill, a 23-unit tropical-theme fast-casual chain based here, has announced plans to expand into California with a development agreement for 15 to 20 more stores.

Rumbi Island, which currently has locations in Utah, Arizona and Colorado, signed an area development agreement with restaurateur Paulo Salgado, who was a market operator for Baja Fresh and most recently a director of operations for Pix Up Stix. Salgado and financial partner Trent Brown will open 15 Rumbi Island Grill units in Orange County, Calif., and have an option to open five more.

Rumbi Island Grill serves food inspired by Jamaican, South Seas and island cuisines, including gourmet rice bowls and entrees with luau pork and blackened mahi mahi. All but three of its current 23 units are company-operated.
