The menu is heavy on fruits, vegetables, lean protein and healthful oils, while shunning artificial sweeteners and refi ned sugars. Best-sellers include steak tacos, halibut with umami sauce and a teriyaki rice bowl. Now, with fi nancial backing from P.F. Chang’s China Bistro, the Scottsdale, Ariz.-based chain is poised for growth.
