Salads are often not the best selling items at chains, but they can have a role to play that goes beyond their numbers. Salads often provide lighter menu items, or at the very least items that seem to be lighter even if they have high-calorie toppings and dressings, that appeal to some guests. And if one member of a party of eight wants a salad, a restaurant needs to offer one or all of those eight potential guests will likely eat someplace else.
Some studies have even indicated that customers feel better about restaurants that offer salads even if they end up ordering burgers, fries, and a shake. Simply knowing they could choose differently makes them feel better.
Of course for chains such as Chopt, Sweetgreen Mad Greens, Just Salad, and Salad and Go, salads are an essential part of their core offerings, but non-salad chains such as Burgerville, Bob Evans, and Starbird also have new salads this season.
