Executive joins winery-restaurant brand from Fleming’s Prime Steakhouse

Cooper’s Hawk Winery & Restaurants has named Beth Scott as chief restaurant officer, the company announced Friday.

Cooper's-Hawk-Beth-Scott-chief-restaurant-officer.jpgThe Downer’s Grove, Ill.-based casual-dining company said Scott, left, in the new position will lead operations for the 45-unit brand and support restaurant growth. She most recently served as president of Fleming’s Prime Steakhouse & Wine Bar, a division of Tampa, Fla.-based Bloomin’ Brands Inc.

“We are excited to welcome Beth to the team where her skills and counsel will add great value to our executive leadership team and thinking,” said Tim McEnery, Cooper’s Hawk CEO and founder, in a statement.

Prior to joining Bloomin’ Brands, Scott led food and beverage experience planning and integration for Disney Parks & Resorts. She also held senior positions with Hilton Hotels & Resorts, Loews Hotels, Todd English’s Olive Group and House of Blues Entertainment Group.

Scott also serves on the board of the National Restaurant Association.

Founded in 2005, Cooper’s Hawk in 2019 received an investment through a fund managed by the private-equity group of Ares Management Corp.

McEnery was honored in 2019 with a Nation’s Restaurant News Golden Chain Award.
