Sandeep Kambo and his brother Jagdeep Kambo operate two full-service Indian restaurants in San Diego called Royal India, which they first opened in 1994.
The brothers recently developed an Express variant of their concept and now have two units of that version in San Diego. The Kambos are also working on a partnership with investment firm Papa Bello Enterprises to franchise the brand.
Royal India Express offers a limited menu with combination meals served with rice and bread. Sandeep described it as similar to Panda Express but with an average check of about $8.50.
Sales have been averaging about $62,000 each month per unit, Sandeep said, putting the Express locations on track for an average unit volume of about $744,000.
